This delicious soup includes soft chicken, spinach, lemon, and orzo pasta in a rich broth. Great for any season!
List of components
8 ounces of orzo pasta
1 teaspoon of olive oil
3 carrots, cut into medium pieces.
3 sticks of celery, cut into small pieces
1 onion of medium size, cut into small pieces.
2 pieces of garlic, finely chopped
Half a teaspoon of dried thyme
Half a teaspoon of dried oregano
Add salt and black pepper according to your preference.
1 leaf of laurel
96 ounces of chicken broth, which is equivalent to 3 cartons. The broth is fat-free and low in sodium.
1/2 cup of freshly squeezed lemon juice
Grated peel of 1 lemon
8 ounces of cooked chicken breast, cut into small pieces.
8 ounces of baby spinach leaves
Additional toppings that you can choose to add. Slices of lemon, shredded Parmesan cheese.
