Step 1: Prepare the Dough
In a mixing bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
In another bowl, mix the flour and salt. Gradually add the yeast mixture to the flour, stirring until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.
Step 2: Make the Filling
In a skillet, heat a tablespoon of vegetable oil over medium heat. Add the garlic and ginger, sautéing until fragrant.
Add the shiitake mushrooms and napa cabbage, cooking until softened (about 3-5 minutes).
Stir in the crumbled tofu, green onions, soy sauce, sesame oil, salt, and pepper. Cook for another 2-3 minutes until everything is well combined. Remove from heat and let cool.
Step 3: Assemble the Buns
Once the dough has risen, punch it down and divide it into 10-12 equal pieces.
Roll each piece into a ball and flatten it into a disk about 3-4 inches in diameter.
Place a tablespoon of the filling in the center of each disk. Gather the edges of the dough and pinch them together to seal the bun. Make sure the filling is well encased.
