5-6 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced
1/3 cup (65g) granulated sugar
1/4 cup (50g) brown sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 tablespoon all-purpose flour (to thicken)

3/4 cup (90g) all-purpose flour
1/3 cup (65g) brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (115g) unsalted butter, melted
Step-by-Step Directions
1. Prepare the Crust:
In a large bowl, combine the flour, sugar, and salt.
Cut in the cold butter pieces with a pastry blender or two forks until the mixture resembles coarse crumbs.
Add the egg yolk and mix. If the dough seems too dry, add 1 tablespoon of cold water at a time until it just comes together.
Form the dough into a disk, wrap it in plastic wrap, and chill for at least 30 minutes in the refrigerator.
Preheat your oven to 375°F (190°C) when ready to bake.
