For the Crust:
1 1/2 cups all-purpose flour
1/2 cup unsalted butter, cold and cut into small pieces
1/4 cup granulated sugar
1/4 teaspoon salt
1 egg yolk
2-3 tablespoons ice water
For the Almond Filling:
1 cup almond flour
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon almond extract
1 teaspoon vanilla extract
For the Topping:
3-4 ripe pears, peeled, cored, and thinly sliced
2 tablespoons apricot jam, warmed (for glazing)
A handful of sliced almonds (optional, for garnish)
Directions
Prepare the Crust:
In a food processor, combine the flour, sugar, and salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
Add the egg yolk and pulse again. Gradually add ice water, one tablespoon at a time, until the dough comes together.
Turn the dough out onto a lightly floured surface and knead it gently into a ball. Flatten it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Almond Filling:
In a medium bowl, beat the softened butter and granulated sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition. Mix in the almond flour, almond extract, and vanilla extract until smooth and well combined.
