Shrimp Fried Rice

Add the mixed vegetables to the skillet and cook for another 2-3 minutes until heated through. If using frozen vegetables, ensure they are fully thawed and warmed.
Scramble the Eggs
Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked, then mix everything together.
Combine with Rice
Add the cooked rice to the skillet, breaking up any clumps. Return the cooked shrimp to the skillet. Pour the soy sauce and oyster sauce (if using) over the rice and mix well to combine. Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through.
Finish and Serve
Remove the skillet from the heat. Stir in the sliced green onions and adjust seasoning with salt and pepper to taste. Serve hot, garnished with lime wedges if desired.
