Tasty Banana Egg Cakes: A Healthy and Delicious Treat

Prepare the Batter:
In a large mixing bowl, mash the ripe bananas until smooth.
Add the eggs, vanilla extract, ground cinnamon, baking powder, and a pinch of salt. Whisk until the mixture is well combined and slightly frothy.
If using optional add-ins, fold them into the batter at this stage.
Cook the Cakes:
Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a small amount of oil.
Pour small amounts of batter onto the skillet to form mini cakes, about 2-3 inches in diameter.
Cook for about 2-3 minutes on each side, or until the cakes are golden brown and cooked through. The edges should be set, and the center should be slightly puffed.
Serve:
Transfer the cooked cakes to a plate and serve warm.
These cakes are delicious on their own, but you can also top them with fresh fruit, a drizzle of honey or maple syrup, or a dollop of yogurt for added flavor.
