1/2 cup uncooked white or brown rice (or 1 cup cooked rice)

How to Make Cabbage Roll Soup
Step 1: Brown the Meat and Sauté the Aromatics
Heat the olive oil in a large pot over medium heat. Add the ground beef or turkey and cook until browned, breaking it into crumbles. Drain any excess fat.
Stir in the onion and garlic, cooking for 3–5 minutes until softened and fragrant.
Step 2: Add the Cabbage and Base Ingredients
Add the chopped cabbage to the pot and stir for 2–3 minutes until it begins to soften.
Pour in the diced tomatoes, tomato sauce, broth, Worcestershire sauce, smoked paprika, thyme, and bay leaf. Stir to combine.
Step 3: Simmer the Soup
Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, stirring occasionally.
Step 4: Add the Rice
Stir in the uncooked rice and simmer for an additional 20–25 minutes, or until the rice is tender.
If using cooked rice, add it in the last 5 minutes of cooking to warm through.
