Grandma's Quick One-Pot Pasta and Veggie Stir-Fry

Step 1: Cook the Pasta
In a large pot or skillet with high sides, bring water or broth to a boil.
Add the pasta and cook for 6–7 minutes, stirring occasionally, until al dente. Reserve 1/2 cup of the cooking liquid and drain the rest.
Step 2: Prepare the Sauce
In the same pot, heat olive oil or butter over medium heat.
Add the minced garlic and red pepper flakes (if using) and sauté for 1–2 minutes until fragrant.
Step 3: Toss Everything Together
Add the cooked pasta back into the pot along with the reserved pasta water, Parmesan cheese, Italian seasoning, salt, and pepper. Toss well to coat the pasta in the sauce.
Stir in the cherry tomatoes, spinach, and peas, cooking for another 2–3 minutes until the veggies are tender and everything is well combined.
Step 4: Serve and Enjoy
Transfer the pasta to plates or bowls and garnish with extra Parmesan cheese and a drizzle of olive oil. Serve hot with a slice of crusty bread, if desired.
