Overnight Crème Brûlée French Toast

Start by slicing the bread into thick slices, about 1 inch each. Challah or brioche is ideal for French toast because they’re soft and absorb the custard beautifully without falling apart.
In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, vanilla extract, cinnamon, granulated sugar, and brown sugar until smooth and well-combined.
Arrange the bread slices in a single layer in a 9×13-inch baking dish. If necessary, layer the bread to fit the entire dish, ensuring that all the bread is touching the custard.
Step 2: Soak the Bread Overnight
Pour the custard mixture evenly over the bread slices, ensuring that each slice is thoroughly soaked. Gently press down on the bread with the back of a spoon to ensure it absorbs the custard.
Cover the baking dish with plastic wrap or aluminum foil and refrigerate overnight. This allows the bread to soak up all the flavors, making it extra rich and custardy.
Step 3: Prepare the Topping
In a small bowl, mix the melted butter, brown sugar, granulated sugar, vanilla extract, and a pinch of salt. This mixture will create a sweet, caramelized topping once baked.
Step 4: Bake the French Toast
Preheat your oven to 375°F (190°C) and remove the dish from the refrigerator.
Drizzle the sugar topping evenly over the soaked bread slices.
Bake in the preheated oven for 35-45 minutes, or until the French toast is golden brown on top and slightly crispy around the edges.
For an extra caramelized finish, you can place the French toast under the broiler for the last 2-3 minutes of baking. Just be sure to watch it closely to avoid burning.
