1. Prepare the oats
In a small bowl, mix the oats with the milk. Let sit for 10 minutes to soften the oats and obtain a soft texture once incorporated into the dough.
2. Prepare the dough
In a separate bowl, mash the bananas until smooth. These bananas will add a natural sweetness and nice moisture to your cake.
In a large bowl, whisk together the eggs and sweetener (if using). If your bananas are very ripe, the sweetener can be omitted. Then add the mashed bananas, cocoa powder, and baking powder. Stir until combined.
3. Add the oats
Add the oatmeal and milk mixture to the dough. Mix carefully so that all the ingredients are well incorporated.
4. Add the nuts
Add the chopped walnuts to the dough. They will add a nice crunch and a nutty flavor that will pair perfectly with the chocolate and banana.
5. Bake the cake
Preheat the oven to 350°F (180°C). Grease a baking pan or line it with parchment paper to prevent the cake from sticking.
Pour the batter into the prepared pan and spread it evenly. Bake for 30 to 35 minutes. The cake is done when a toothpick inserted in the center comes out clean.
