Sauté Onion & Garlic: Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
Cook the Sausage: Add the Italian sausage to the pot and cook until browned, breaking it up as it cooks.
Add Broth & Tomatoes: Pour in the broth and crushed tomatoes, stirring well. Bring the soup to a simmer.
Cook the Noodles: Add the broken lasagna noodles to the pot. Cook until the noodles are al dente, about 10-12 minutes.
