Caramel Apple Cookies

Preheat the Oven:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
Mix the Dry Ingredients:

In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
Cream the Butter and Sugars:

In a large bowl, cream the softened butter with the granulated and brown sugars until light and fluffy. Beat in the egg and vanilla extract until well combined.
Add the Apples:

Gradually mix the dry ingredients into the wet mixture. Fold in the chopped apples and caramel bits.
Shape the Cookies:

Using a spoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each.
