In a small bowl, mix the minced garlic, garlic salt, paprika, 2 tablespoons of olive oil, and salt/pepper to taste.

Season the chicken thighs with half of this mixture. In a skillet over medium heat, brown the thighs in the remaining tablespoon of oil for about 2 minutes on each side to enhance their flavor and appearance.

Place the potatoes in the slow cooker, tossing them with the rest of the garlic mixture. Then, place the browned chicken thighs on top of the potatoes.

Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is thoroughly cooked and tender.
