In a food processor, whip the cold heavy cream until it thickens to soft peaks—be careful not to overdo it. Add the softened cream cheese in chunks and blend until smooth. Gradually pour in the sweetened condensed milk and key lime juice, processing until it becomes creamy and well mixed.
3. Assemble the Parfaits:
In each of the 6 parfait jars or glasses, start layering your ingredients: place about 2 tablespoons of the graham cracker mixture at the bottom. Follow this with approximately 1/4 cup of the key lime filling. Repeat this layering process twice more, finishing with a layer of key lime mixture on top.
