- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar, plus extra for rolling
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1/2 cup finely chopped fresh strawberries
- 1 teaspoon strawberry extract (optional for more intense flavor)
- Red or pink food coloring (optional for added color)
Directions
1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
2. In a large bowl, using an electric mixer or a stand mixer fitted with a paddle attachment, cream the butter and 3/4 cup sugar together until light and fluffy, about 3-4 minutes.
