Prepare the Ribs
Remove the silver membrane from the back of the ribs for better texture. Use a knife to loosen the membrane, then grip it with a paper towel and peel it off.
Pat the ribs dry using a paper towel to help the seasoning stick.
Season the Ribs
In a small bowl, combine smoked paprika, garlic powder, onion powder, black pepper, salt, oregano, cayenne pepper, and brown sugar. Drizzle olive oil over the ribs and rub it evenly. Then, generously apply the dry rub mix, pressing it into the meat to ensure it sticks.
Roast the Ribs
Line a baking sheet with foil and place a wire rack on top. Lay the seasoned ribs on the rack with the meaty side facing up.
Cover the ribs loosely with foil and roast them in the oven for 2.5 to 3 hours, or until tender and cooked through.
