Step 1: Prepare the Ribs
Remove the membrane: Remove the thin membrane on the back of the ribs to allow the marinade to penetrate better and to ensure tender ribs.
Cut the ribs: Cut the racks into smaller sections, about 3-4 ribs each, for easier handling and serving.
Step 2: Marinate the Ribs
Combine marinade ingredients: In a mixing bowl, combine soy sauce, hoisin sauce, brown sugar, honey, rice vinegar, minced garlic, grated ginger, sriracha or hot sauce (if using), sesame oil, five-spice powder, and black pepper. Mix well.
Marinate the ribs: Place the ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for the best flavor.
Step 3: Prepare for Cooking
Preheat the oven or grill: Preheat your oven to 300°F (150°C) or preheat your grill to medium-low heat.
Prepare the basting sauce: In a small bowl, combine honey, soy sauce, and hoisin sauce. Set aside.
Step 4: Cook the Ribs
Bake the ribs (oven method): Place the marinated ribs on a baking sheet lined with aluminum foil. Cover with another sheet of foil and bake for 2.5-3 hours, or until the ribs are tender.
Grill the ribs (grill method): Place the marinated ribs on the grill over indirect heat. Cover and cook for 2.5-3 hours, turning occasionally, until the ribs are tender.
