Dirty Rice

Step 1: Cook the Rice

1. Bring 4 cups of chicken broth to a boil in a large pot over medium-high heat.

2. Add the rice and bay leaf, stirring to combine.

3. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.

4. Remove from heat and let the rice sit, covered, for a few minutes. Fluff with a fork and discard the bay leaf.

Step 2: Brown the Meat and Vegetables

1. In a large skillet over medium heat, brown the ground beef and pork sausage.

2. When the meat is about halfway cooked, add the chopped onion, celery, bell pepper, and chicken livers (if using).

3. Continue cooking until the vegetables are tender and the meat is fully browned.

Step 3: Add Seasonings and Combine

1. Reduce the heat to low and stir in the minced garlic, cooking for 1 minute while stirring constantly.

2. Add the Cajun seasoning, ½ cup chicken broth, and cooked rice to the skillet. Mix thoroughly to combine.

Step 4: Add Herbs and Adjust Seasoning

1. Stir in the chopped parsley and sliced green onions.

2. Season with salt and pepper to taste.

Step 5: Serve

1. Serve the Cajun Dirty Rice hot as a main dish or a side dish alongside your favorite proteins.
