This Southern Tex-Mex dish isn't just a star main, but it makes for great leftovers as well

2 tablespoons olive oil
1 white onion, diced
1 red onion, diced
1 red bell pepper, diced
1 jalapeño pepper, seeded and diced
½ teaspoon ground cumin
½ teaspoon chili powder
Salt and pepper to taste
2 tablespoons chopped chipotle chili peppers in adobo sauce
2 cloves garlic, minced
1 can black or pinto beans, drained
1 can diced tomatoes
2 cups rotisserie chicken, shredded
1 ½ cups chicken broth
Juice of 1 lime
