1. Sauté veggies in a large pot with olive oil and spices.
2. Add raw chicken, potatoes, and chicken broth.
3. Bring to a boil, simmer for 30 minutes.
4. Remove large potato pieces and chicken.
5. Blend large potato quarters with 1/2 cup broth, return to pot.
6. Shred chicken, return to pot. Stir, garnish, and serve.
Instant Pot Instructions:
1. Sear chicken in Instant Pot with olive oil.
2. Sauté celery, carrots, onions, garlic, spices.
3. Add small-cut potatoes, then chicken and large potato quarters.
4. Pour in chicken broth, cook on High Pressure for 9 minutes.

5. Natural release 5 minutes, then manual release.
6. Remove large potato pieces and chicken.
7. Blend large potato quarters with 1/2 cup broth, return to pot.
8. Shred chicken, return to pot. Stir, garnish, and serve.
