Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Roll the dough into 1-inch balls and then roll each ball in granulated sugar.
Place the sugar-coated dough balls on the prepared baking sheet, about 2 inches apart.
Bake for 8-10 minutes, or until the edges are lightly golden.
Immediately press a chocolate kiss into the center of each cookie as soon as they come out of the oven.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
