1. Preheat your oven to 350°F (175°C).
2. Place the pre-made pie crust in a 9-inch pie dish, pressing it gently into the bottom and sides. Trim any overhanging dough and crimp the edges if desired.
3. In a large bowl, toss the sliced apples with lemon juice, then set aside.
4. In a separate bowl, mix together the granulated sugar, brown sugar, flour, cinnamon, nutmeg, and salt.
5. Add the sugar mixture to the apples and toss to coat evenly.
6. Arrange the apple slices evenly in the pie crust.
7. In another bowl, whisk together the eggs, buttermilk, and vanilla extract until well combined.
8. Pour the buttermilk mixture over the apples in the pie crust.
9. Bake in the preheated oven for 50-60 minutes, or until the custard is set and the top is golden brown. A knife inserted into the center should come out clean.
10. Allow the pie to cool completely on a wire rack before slicing and serving.
