Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, mix together the shredded coconut, flour, baking powder, and salt.
In a separate large bowl, beat the sugar and butter until creamy and smooth. Add the egg and vanilla extract, and mix until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be thick and sticky.
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden brown.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
