Ingredients:
15.25 ounces white cake mix
2 eggs, room temperature
3 tablespoons cornstarch
Green gel food coloring
8 tablespoons softened unsalted butter
2 teaspoons peppermint extract or mint extract
1/2 teaspoon vanilla extract
1/4 cup powdered sugar
Red heart-shaped sprinkles
Instructions:
1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
2. In a mixing bowl, combine the white cake mix, softened butter, room-temperature eggs, peppermint or mint extract, and vanilla extract. Mix until a dough forms. (A hand mixer helps here)
3. Add green gel food coloring to the dough until you achieve the desired Grinch-green color. Mix on low speed as batter should be thick and sticky.
4. In a separate small bowl, mix together the powdered sugar and cornstarch.
5. Roll the dough into small balls, then roll each ball in the powdered sugar-cornstarch mixture.
6. Place the coated dough balls on a baking sheet lined with parchment paper, spacing them a couple of inches apart. Flatten each dough ball slightly with your hand.
