I dig serving these when I have people over. They're quick to throw together, light on the pocket, and look so chic.

1. Preheat your oven to 350 degrees Fahrenheit.
2. In a large mixing bowl, combine the diced pineapple with granulated sugar, 2 tablespoons of flour, vanilla extract, cinnamon, and nutmeg.
3. Pour the pineapple mixture into a greased 9-inch pie dish or a similar sized baking dish.
4. In the same bowl (no need to wash it), mix the oats, brown sugar, 1/2 cup of flour, and salt. Add the cold cubes of butter and use a pastry cutter or your fingers to blend the mixture until it resembles coarse crumbs.
5. Evenly sprinkle the oat mixture over the pineapple.
6. Bake in the preheated oven for about 45 minutes, or until the top is golden brown and the pineapple filling is bubbly.
