Step 1: Prepare the Strawberries
In a bowl, mix the diced strawberries with sugar (or honey) and lemon juice.
Let the mixture sit for 15–20 minutes to allow the strawberries to release their juices.
Step 2: Prepare the Cornbread Batter
Preheat your oven to 375°F (190°C). Grease an 8-inch baking dish.
In a large mixing bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
In another bowl, mix milk, melted butter, eggs, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Fold in half of the prepared strawberries for a fruity burst in the cornbread.
