Preheat your oven to 190°C/375°F. Lightly grease a baking tray with cooking spray.

Step 1
In a bowl mix together meat with onion, garlic, salt and pepper, all spices, and breadcrumbs.

Step 2
Make 2 sausages, making sure to lightly dampen your hands to keep it from sticking. Put the two sausage mixture in the fridge for 10-20 minutes.

Step 3
Roll out the puff pastry and cut it into two rectangles large as the sausage mixture. You can put them in the fridge for few minutes in order to work it better. Now put the sausage mixture on a side of the pastry. Start folding the pastry over the meat filling.

Step 4
Brush the egg yolk along the edges of the pastry and finish rolling.

Step 5
Pinch the roll to seal it better. Repeat with the other sausage mixture, then place them in the fridge for 10 minutes.

Step 6
Cut into the slices, brush with remaining egg yolk and sprinkle with sesame seeds if using.

Step 7
Transfer the rolls seam-side down to the baking pan and bake for 30 minutes or until golden brown.

Step 8
Once cooked, remove from the oven and let it cool for a few minutes

Step 9
Serve and enjoy!

Notes
Cut the sausage rolls into whatever lengths you prefer. You can try bite-sized versions or cut them a little longer for a traditional sausage roll shape.
