Ingredients:

For the dough:
250g wheat flour
125g of cold butter cut into cubes
50g sugar
1 egg
1 pinch of salt
For the filling:
6 large apples, peeled and thinly sliced
50g sugar
2 tablespoons butter
1 teaspoon ground cinnamon
Juice of 1/2 lemon
Preparation:

Dough: In a food processor, mix the flour, butter and sugar until you get a moist crumble. Add the egg and salt and process until a ball of dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
Filling: In a pan, melt the butter and add the apples. Cook over low heat for about 10 minutes, or until the apples soften. Add sugar, cinnamon and lemon juice. Mix well.
Assembly: Roll out the dough in a greased and floured pie pan. Place the apple filling over the dough. Fold the edges of the dough inwards and brush with egg yolk.
Bake: Bake in a preheated oven at 180°C for about 35-40 minutes, or until the pastry is golden brown and the filling is bubbly.
