– 4 boneless, skinless chicken breasts
– 2 cups sliced mushrooms (button or cremini)
– 1 medium onion, thinly sliced
– 2 garlic cloves, minced
– 1 cup grated cheddar cheese (or a blend of cheeses like mozzarella and cheddar)
– 1 tablespoon olive oil
– 1 tablespoon butter
– 1/2 cup chicken broth or white wine (optional)
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Instructions:
1. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C).
2. **Prepare the Chicken:**
– Season the chicken breasts with salt and pepper on both sides.
– Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for about 2-3 minutes on each side until golden brown. (They don’t need to be fully cooked, as they will finish cooking in the oven.)
– Place the seared chicken breasts on a baking sheet lined with parchment paper.
