Step 1: Prepare the Crust
Preheat your oven to 325°F (165°C).
In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and cinnamon. Mix until the crumbs are evenly coated.
Press the mixture into the bottom of a greased or parchment-lined 9-inch springform pan, creating an even layer.
Bake for 8–10 minutes, then let it cool while preparing the filling.
Step 2: Make the Cheesecake Filling
In a large bowl, beat the cream cheese and sugar together until smooth.
Add the eggs, one at a time, mixing well after each addition.
Mix in the vanilla extract, sour cream, and heavy cream until smooth and creamy.
Step 3: Prepare the Cinnamon Honeybun Swirl
In a small bowl, mix the brown sugar, cinnamon, melted butter, and honey until combined.
Step 4: Assemble the Cheesecake
Pour half of the cheesecake batter over the cooled crust.
Drizzle half of the cinnamon honeybun swirl over the batter and gently swirl it using a toothpick or knife.
Pour the remaining cheesecake batter over the swirl, then drizzle the rest of the cinnamon mixture on top, swirling again for a marbled effect.
