Step 1: Preheat and Prepare the Pan
Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch (20×20 cm) baking pan or line it with parchment paper for easy removal.
Step 2: Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
Step 3: Add the Wet Ingredients
Make three small wells in the dry mixture. Pour the vanilla extract into one well, vinegar into another, and vegetable oil into the third. Then, pour the water or coffee over everything.
Step 4: Mix and Bake
Use a whisk or spoon to stir until no dry streaks remain, but avoid overmixing. Pour the batter into the prepared pan and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
Step 5: Prepare the Chocolate Glaze (Optional)
While the cake is cooling, whisk together the powdered sugar, cocoa powder, plant-based milk, and vanilla extract in a small bowl. Adjust the consistency with more milk if needed.
