Ingredients
For the Lemon Filling:
. 500 ml of milk
. 100 g of sugar
. 50 g of corn starch
. 1 lemon zest (grated)
. 100 ml of lemon juice
For the Assembly:
. Ladyfingers
. Milk (for soaking the ladyfingers)
. Lemon jam (optional, for added sweetness and flavor)
. 350 ml of whipping cream
. 45 g of powdered sugar
Directions
Step 1: Make the Lemon Filling
In a saucepan, combine 500 ml of milk, 100 g of sugar, 50 g of corn starch, lemon zest, and 100 ml of lemon juice.
Cook over medium heat, stirring constantly, until the mixture thickens. This will take around 5-7 minutes. Be sure to keep an eye on it to avoid lumps.
Once the filling has thickened, remove from heat and let it cool to room temperature. You can place it in a bowl and cover it with plastic wrap to prevent a skin from forming.
