1 egg white (the one we reserved)
1 whole egg
2 ½ tablespoons (35 g) sugar
1 heaped tablespoon (30 g) wheat flour
TIP: Use oven-safe glass glasses to make this recipe!
Caramel:
In a small saucepan, put the sugar, water, lemon juice, mix and bring to a low heat until boiling (without stirring).
As soon as it starts to boil, tilt the saucepan to stir the caramel until it turns a golden color.
When it is golden, pour it into the glass glasses.
Flan:
In a bowl, put 1 egg yolk, 3 whole eggs, the sugar and whisk well with a whisk.
Then add the milk and whisk again.
Transfer the liquid to a jug by passing it through a sieve.
If small bubbles form on the surface, remove them with a spoon.
Pour the liquid into the glasses with the caramel.
