In a mixer, put 1 egg white, 1 whole egg and the sugar.
Beat until you get a white, frothy cream, like egg whites.
Add the sifted wheat flour and mix gently with a spatula.
Using a tablespoon, place a little of this frothy mixture on the flans in the glasses.
Assembly and finishing:
Place the glasses in a mold and add boiling water halfway up to cook in a bain-marie.
Bake in a preheated oven at 160 °C for about 30 minutes,
or until they are golden brown on top. It is important to cook at a low temperature!
Then remove them from the oven and enjoy!
