Ingredients
Filling:
1 large egg
110 g (3.9 oz) sugar
10 g (0.35 oz) vanilla sugar
1.5 tbsp cornstarch
350 g (12.3 oz) sour cream or Greek yogurt
40 g (1.4 oz) butter
Instructions
Make the filling:
In a medium saucepan, crack the large egg and beat lightly.
Add the sugar, vanilla sugar, and cornstarch to the egg. Beat until well combined and smooth.
Gradually add the sour cream or Greek yogurt, continuing to beat until fully incorporated and there are no lumps.
Cook the filling:
Place the saucepan over medium heat.
Cook the mixture, stirring constantly to prevent it from sticking to the bottom or forming lumps.
Continue to stir until the mixture thickens to a pudding-like consistency. This should take about 5 to 7 minutes. Add the butter:
Once the filling has thickened, remove the saucepan from the heat.
Add the butter to the hot mixture and stir until the butter is completely melted and incorporated.
Cool the filling:
