Instructions:
1️⃣ In a large pot, heat 1 tbsp oil over medium heat. Brown beef cubes until golden, then remove.
2️⃣ In the same pot, sauté onion, carrots, celery, and garlic for 5 minutes.
3️⃣ Add beef broth, tomatoes, beef, salt, pepper, thyme, and oregano. Bring to a boil.
4️⃣ Stir in barley, reduce heat, and simmer for 45-50 minutes until barley is tender.
5️⃣ Taste and adjust seasoning. Serve hot!
