Caramel Drizzled Popcorn Bars

Prep the popcorn: Place the popped popcorn in a large mixing bowl. Line an 8Γ—8-inch pan with parchment paper.
Make the binding syrup: In a saucepan over medium heat, melt butter. Add brown sugar, honey, and salt. Stir continuously until it bubbles. Let it simmer for 2–3 minutes, then remove from heat and stir in vanilla extract.
Combine: Quickly pour the hot mixture over the popcorn. Use a spatula to mix gently and coat all the popcorn evenly.
Add extras: If using, sprinkle in mini chocolate chips once the mixture has cooled slightly to avoid melting.
