Big Apple Fritters

1. Prep the Station

Place cooling racks over wax paper-lined baking sheets. Set aside.

2. Make the Batter

In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.

Make a well in the center and add milk, eggs, and applesauce. Stir just until combined—don’t overmix.

Gently fold in the diced apples.

3. Fry the Fritters

Heat 1½ to 2 inches of canola oil in a deep fryer, cast iron skillet, or Dutch oven to 375°F.

Drop about ¼ cup of batter per fritter into the oil, flattening slightly as it cooks.

Fry for about 2 minutes per side, or until golden brown.

Remove and drain on paper towels.
