Instructions
1. Cook the rice according to package instructions.
2. Chop all the vegetables and cook them in olive oil for 10 minutes.
3. Add garlic and spices and cook for 1 minute.
4. Add the remaining ingredients except for the rice and spinach, and bring to a boil.
5. Reduce heat and simmer for 15-20 minutes.
6. Add the spinach and rice and cook for 3 minutes.
