Braised Beef Soup with Cheese Bread

For the Beef:

1.5 lb chuck roast or beef shank

1 tbsp olive oil

1 onion, chopped

4 cloves garlic, minced

1 tbsp tomato paste

6 cups beef broth

1 tbsp Worcestershire sauce

1 tsp dried thyme

Salt & pepper to taste

🧄 For the Cheese Bread:

4 slices French baguette or rustic bread

1 cup shredded Gruyère or mozzarella

1 tbsp chopped parsley (for garnish)
