1 lb (450g) mushrooms (cremini, button, or shiitake), cleaned and halved (or left whole if small)

3 tbsp unsalted butter, melted

2 tbsp olive oil

4 garlic cloves, minced

1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

1 tbsp fresh parsley, chopped (plus extra for garnish)

½ tsp salt (or to taste)

¼ tsp black pepper

½ tsp red pepper flakes (optional, for heat)

1 tbsp lemon juice (optional, for brightness)

¼ cup grated Parmesan cheese (optional, for serving)
