• 2 tbsp unsalted butter
• 2 tbsp all-purpose flour
• 1 cup milk (whole or 2% works best)
• 1 cup shredded cheddar cheese (sharp or mild)
• 1/2 cup shredded mozzarella cheese
• 1/4 tsp garlic powder
• 1/4 tsp onion powder
• Salt and pepper, to taste

Optional Toppings:
• Fresh parsley, chopped
• Crushed red pepper flakes
• Crumbled bacon or breadcrumbs

Step 1: Preheat & Prep
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2: Roast the Cauliflower
In a large bowl, toss cauliflower florets with olive oil, salt, pepper, garlic powder, and paprika.
Spread in a single layer on the baking sheet. Roast for 20–25 minutes, flipping halfway, until tender and slightly caramelized.

Step 3: Make the Cheese Sauce
In a small saucepan, melt butter over medium heat.
Whisk in flour and cook for 1 minute to make a roux.
Gradually whisk in milk, stirring constantly until slightly thickened (3–5 minutes).
Reduce heat to low. Add cheeses one handful at a time, stirring until melted and smooth.
Season with garlic powder, onion powder, salt, and pepper. Remove from heat.

Step 4: Combine & Bake
Transfer roasted cauliflower to a baking dish.
Pour cheese sauce over the florets and mix to coat.
Add extra shredded cheese or toppings if desired.
Bake for 10–15 minutes, until the cheese is bubbly and golden.
