Potato Kielbasa Soup

Heat olive oil in a large pot over medium-high heat. Add the sliced kielbasa and cook until browned. Remove and set aside.

Cook the Vegetables
In the same pot, add the diced onion, celery, carrots, and garlic. Sauté until the vegetables begin to soften.

Add Broth and Potatoes
Pour in the chicken broth and add the cubed potatoes. Bring to a boil, cover, and simmer for about 15 minutes or until potatoes are tender.

Finish the Soup
Return the cooked kielbasa to the pot. Stir in the milk, cheddar cheese, and Parmesan cheese. Simmer for another 10 minutes, stirring occasionally, until the cheese is melted and the soup is creamy.

Season and Serve
Add salt and pepper to taste. Garnish with chopped parsley and serve hot.
