Ingredients
For the Potato Layer:
7-8 potatoes, peeled and thinly sliced
3 eggs
1 onion, chopped
2 cloves garlic, minced
Parsley (to taste)
1.5 tsp salt
0.5 tsp ground pepper
For the Chicken Layer (optional):
4 chicken breasts, cooked and sliced or cubed (or you can use rotisserie chicken for convenience)
1 tbsp olive oil (for cooking)
Directions
Prepare the Potato Layer:
Preheat your oven to 200°C (400°F).
Peel and thinly slice the potatoes into rounds.
In a mixing bowl, whisk the eggs, and add the chopped onion, minced garlic, parsley, salt, and pepper. Mix everything well.
Add the sliced potatoes to the egg mixture, tossing to ensure the potatoes are coated.
Layer the Chicken and Potatoes:
If using uncooked chicken, heat a tablespoon of olive oil in a pan and cook the chicken until it’s browned and cooked through. Slice or cube the chicken once it’s ready.
In a baking dish, layer the potato mixture evenly. If you’re using chicken, you can add the cooked chicken in layers between the potatoes or just place it on top.
Bake:
Cover the baking dish with aluminum foil and bake for 25 minutes. This will cook the potatoes through and keep them tender.
After 25 minutes, remove the foil and bake for another 5-10 minutes, or until the potatoes are golden and crispy on top.
