Avocado Lemon Loaf
This Avocado Lemon Loaf delivers a delightful balance of creamy richness and citrus brightness. Ingredients
Wet Ingredients:

1 large ripe avocado (about ½ cup mashed)

½ cup (120ml) plain yogurt (or sour cream)

½ cup (120ml) vegetable oil (or melted coconut oil)

2 large eggs

¾ cup (150g) granulated sugar

Zest of 1 lemon

Zest of ½ orange

2 tbsp (30ml) fresh lemon juice

Dry Ingredients:

1 ½ cups (190g) all-purpose flour

1 ½ tsp baking powder

¼ tsp baking soda

½ tsp salt

Topping:

1-2 tbsp Demerara sugar (for sprinkling)
