Preheat oven to 350°F. Grease and flour an 8-inch cake pan.
In a bowl, cream butter and sugar until light. Add eggs, one at a time, followed by lemon zest and vanilla.
Mix in flour, baking powder, and salt, alternating with milk. Pour into the pan and bake for 30-35 minutes until golden.
Whip heavy cream, powdered sugar, lemon juice, and zest until fluffy for the filling.
Once cake is cool, slice it in half and spread the lemon cream between layers. Dust with powdered sugar.
Notes:
For extra lemon flavor, brush cake layers with lemon syrup before filling.
