Beef Enchilada Dip
Servings: 8

Ingredients
1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 (10-ounce) can red enchilada sauce
1 (15-ounce) can black beans, drained and rinsed
1 (4-ounce) can diced green chilies
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro
Salt and pepper to taste
Directions
1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
2. Add the diced onion and minced garlic to the skillet, and cook until the onion is translucent, about 3-4 minutes.
3. Stir in the enchilada sauce, black beans, and diced green chilies. Season with salt and pepper to taste.
4. Reduce the heat to low and let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
5. Preheat your oven to 350°F (175°C).
6. Transfer the beef mixture to a baking dish, and sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top.
7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
8. Remove from the oven and let it cool slightly before garnishing with chopped cilantro.
