My Irish neighbor introduced us to this recipe. Even though we don't typically enjoy peas, this turned out to be wonderful!

Cheddar and Tomato Salad
Servings: 4

Ingredients
1 cup shredded cheddar cheese
2 cups diced tomatoes
1 cup green peas, fresh or thawed if frozen
1/4 cup red onion, finely chopped
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Fresh basil leaves for garnish (optional)
Directions
In a large mixing bowl, combine the shredded cheddar cheese, diced tomatoes, and green peas.
Add the finely chopped red onion to the bowl.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Pour the dressing over the salad ingredients and toss gently to combine, ensuring everything is evenly coated.
Transfer the salad to a glass baking dish for serving.
Garnish with fresh basil leaves if desired.
Serve immediately or refrigerate for up to 2 hours before serving to allow the flavors to meld.
