Cheesy Hamburger Potato Casserole

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Cook beef mixture:

    • In a large skillet over medium heat, cook ground beef and onion until browned and soft.

    • Add garlic and cook for 1 more minute.

    • Season with salt, pepper, and paprika (if using).

    • Drain excess fat and set aside.

  3. Layer the casserole:

    • Add half the potatoes to the bottom of the dish.

    • Top with half the beef mixture and half the cheddar cheese.

    • Repeat layers with remaining potatoes, beef, and cheese.

  4. Mix sauce:

    • In a bowl, whisk together sour cream, cream of soup, and milk until smooth.

    • Pour evenly over the casserole.

  5. Bake:

    • Cover with foil and bake for 45 minutes.

    • Remove foil and bake for 15–20 more minutes until potatoes are tender and top is bubbly.

    • Optional: Add fried onions or extra cheese in last 5 minutes.

  6. Rest and Serve:

    • Let cool a few minutes before serving. Garnish with parsley, if desired.
