Fresh Salad from the Garden

Instructions:

  1. Mix the Vegetables
    In a large bowl, combine all ingredients. Use large spoons to mix well until the salt begins to draw out liquid.

  2. Rest the Mixture
    Let it sit for 30 to 40 minutes so the vegetables release their natural juices.

  3. Fill the Jars
    Use clean 700 ml jars. Spoon the vegetable mixture into each jar, then pour in the released juices to cover the contents completely.

  4. Sterilize the Jars

    • Line a large saucepan with a cloth.

    • Place 4 jars at a time inside.

    • Fill the pan with cold water, cover, and bring to a boil.

    • Boil for 15 minutes to sterilize.

  5. Seal and Cool
    Seal the jars tightly. Cover them with a cloth and allow them to cool for 20 to 24 hours without touching.


Storage Instructions:

  • Store in the refrigerator’s produce drawer or a cool, dark pantry.

  • Shelf life: up to 12 months.

  • Always check the seal before opening. Discard if there are signs of spoilage.

This method is simple, efficient, and preserves the taste of your garden vegetables without artificial preservatives.
